What are the job opportunities like for electrical/mechanical engineers in especially Ireland/or abroad?

Could someone please tell me the pay and opportunities for electrical/mechanical engineers in Ireland/or abroad?

There is a shortage of both.
"Good people will always land on their feet"
"The world is your oyster" I say these things seriously.
Pay, well that does not vary that much in western countries the average in AUD is also $60000 this is the McDonalds index at work. That is it costs very approximately around the same in local currency for a Big Mac even though the exchange rate might be quite different the local cost of living may not.
The skies your Oyster and the The Worlds your limit.......well anyway loads and loads of work for you....go get it!

I just know mechanical engineering is the broadest and most common engineering degree, and electrical is right behind it. In the US the average mechanical engineer salary is about $60,000.

MECHANICAL ENGINEERING is known as Mother Engineering, without which Engineering is meaningless, incomplete. Every Engineering course is related with MECHANICAL ENGINEERING
After gaining an HNC in mechanical engineering, I worked in the field for 15 years in the UK. I got out a couple of years ago as the government has killed the industry. English manufacturers can't compete with the rest of the world. Do yourself a favour and go into an industry with a future. For what you need to learn to be a good engineer, you'd be better off learning communications, web-design, programming or the like. You'll get paid more, won't get dirty and won't find the government's just shut your industry down overnight.
