Does a foreign national stand a chance of landing a job in the US along an alternative career field?



Hi, i live outside of the US right now..suppose i were looking for information about the kind of courses (offered in the US) which would maximize my chances of landing a job there after i completed the course, where would i look? Is there a Government or Dept. of Labor website which lists the particular fields where people are most required - including categories for foreign nationals / non-immigrants?

I hold a Bachelor's degree in Engineering with quite a bit of work experience, but would like to shift careers - am more interested in the social sciences, history, theatre and the Arts. I'm kinda of confused about how to go about finding the right course in the US for me which would at least help me gain an initial footing in my career immediately afterwards... though identfying a course is not tough, i'd like to study and then work for a few years in the US, gain enough exposure after which i want to return to my home country...
