Well look up each country and take into account your wages and the cost of living etc, the weather and stuff you would like to see/do when you're not working. Hopefully one will come out a clear winner.

Poland. Nice and brisk. Better food

If you are thinking of training horses for dressage there is no doubt Spain, the home of the Lipisana horses, is the place to be. If you are talking just looking after ordinary horses it doesn't really matter. Go for best wages.

Do you speak Spanish?
Do you speak Polish?

Which pays more?

Which location will you give the better lifestyle?

If you are interested in Polo, then Spain is far better (assuming, of course, the job is in one of the polo-playing areas.)

As others have said, it depends on what you're looking for - if part of the intent is to learn a foreign language, then Spanish is probably likely to be more useful than Polish.

(Please, no jokes about Poles working in London - in my experience, 1: they are mostly hard working, and 2: they speak reasonbly good English, so learning Polish isn't particularly a benefit even if you do want to hire some of the best carpenters around.)
