How do i get a job in engineering if i can only study distance learning?

i work as a chef now but want a total career change and have always loved all things technical. I have good grades in maths from school and a reasonable aptitude for most subjects but what i'm most worried about is spending a lot of time and money on a career change and not getting a job at the end of it because i have no industry experience.

In order for this to work out for you, I would say that you would have to totally make up your mind and commit to this.

Engineering is not the type of study that you can half-*** and make it through with good grades. You won't be able to keep working 8 hour days or so and make it through the cirriculum. I'm in mechanical engineering right now and I love it, but its hard work.

Also, I don't know of any schools that would offer every class you need via distance learning. Work experience like co-ops look good on a resume but I don't think its completely necessary if you graduate with good grades.

I would just suggest that you make you commit 100% if you're going to go for it, otherwise you'll end up spending thousands of dollars with nothing to show for it.
To tell you the truth. One should never opt for a distant learning education. This will seperate you from the real scenario and you will not be able to face the real world outside. You can change your job, there is no problem. You say that your grades in maths and scores in the other apptitude tests are good, then you need not worry at all. Why don't you join some good institute or a university and continue your job too. In this way you can fund your education with the salary you get as a chef. After successfuly passing out, you can find a reasonable job in any sector you want to.
You will sure plan out ways and find a good university or institute near your job place.
It depends on the major you want training in. Some like construction and architecture are (somehow ok) to be studied distance learning. Electrical, mechanical and electronics are not easily understood even in campus !!!

That's true, it's not easy to study engineering, since it relies mostly on the site work and practical training...

I think you should first try hard to find a college near by you, then start considering the distance learning and chose something you can understand and like...
Regardless of the school, most employers frown upon distance learning. Sure you get a degree, but if no one will employ you then you have a problem. I moved my family (wife and three kids) from California to Virginia in order to attend medical school. It's a major sacrifice and majorly expensive, but like engineering it should pay off in more ways than money.
